For this dish you will need:
- 1 can of cooked butter beans in water
- 1 big onion
- 2 cloves of garlic
- 15 small chorizo sausages or 1 big
- 250gr spinach
- 1 can of chopped tomatoes
- 150gr feta cheese
- 4 tbspoons of olive oil
- 1/2 teaspoon of cumin seeds
- 1/2 teaspoon of chilli flakes
Heat the olive oil in a pan, chop the onion and garlic and cook in the pan until the onion becomes soft. Five minutes after you've put the onion and garlic in the pan, add the cumin seeds.
Add the chopped tomatoes in the pan, the salt and pepper, cover with the lid, lower the heat and cook for 10 minutes.
Wash the spinach and put it in a casserole pot. Drain the butter beans and add them in the pot with the spinach.
When your tomato sauce is ready add it in the pot with spinach and beans.
Cut the chorizo in big pieces and fry in a pan until it gets cooked through.
6. Add the chorizo in the pot and mix everything together.
Turn on the oven to 180 degrees C, cover the pot with a lid or foil paper and put it in the over for 30 minutes.
Take the pot out of the oven and crumble the feta on top of the stew. Put the pot back in the oven for 10 more minutes uncovered so that some liquid evaporates and the sauce thickens.
Serve with some garlic bread and a cold beer!
This dish can be equally tasty vegetarian dish if you remove the chorizo.
