Red lentils with sweet potato and kale
You will need:

  • 2 sweet potatoes
  • 100 grams of kale
  • 150 grams of red lentils
  • 2 tbs olive or coconut oil
  • dry garlic
  • cumin seeds
  • bombay potato spice mix
  • 1/2 lemon
  • water
  • salt & pepper

    Peel the sweet potatoes and cut them in cubes. Put the oil in the pot and wait until it's hot. When ready add the potatoes, dry garlic and cumin seeds. Leave for 5 minutes.

    Meanwhile wash the kale and shred to long slices discarding the hard talk. Throw in the pot with the potatoes and stir. Leave for 10 minutes.

    Add the lentils and cover with hot water. Leave on low heat for 15 minutes and stir occasionally.

    Add all the remaining spices and stir for another 5 minutes.

    When it gets thick and the lentils are falling apart turn off the heat and add some lemon juice. Try it first though! Maybe you don't want to add any sourness to it.

    Enjoy with some feta cheese or garlic bread.
